Rose-water poached peaches with quinoa – Pesche schiacciate sbollentate nell’acqua di rose con quinoa –Pljosnate breskve poširane u ružinoj vodici s kvinojom


I was so attracted by this recipe that I couldn’t wait even for the weekend, so I did it the day after I read it. And I did well, because it is absolutely the “summer desert” I was looking for.

If you like peaches and flavour of red roses this dish will surprise you with the sweetness and its exquisite taste. This is a top season for peaches and it was not difficult to find doughnut peaches – small, flatten and sweet fruits with a white pulp. The combination with the rose-water is the perfect one, there is no need to add other spices to it, it is already so naturally perfumed and flavourful. Replacing the rice from the original recipe was a good choice, because I don’t like sticky rice and quinoa has grainy texture that I prefer. What about the smell? It’s beyond words, you must try it!

















ROSE-WATER POACHED PEACHES WITH QUINOA

For one person you will need:

1 doughnut peaches
1 tablespoon caster sugar
25ml water
25ml rose-water

35gr quinoa
pinch of salt
100ml water
1 teaspoon of olive oil

some crumbled almonds

Cook the quinoa into slightly salted water for 10 minutes. Drain it and put it into a single bowls. Add some olive oil, mix together and put aside.
Then wash your peaches. To remove the stones from the peaches first use the knife to find where the stone is and then use the apple corer to extract the stone.
Pour rose-water, sugar and water into a large casserole and let the liquid boil slowly for few minutes. Add unpeeled peaches into the liquid and poach them for about 5minutes on one side, then turn the peaches and continue poaching for another 5 minutes. Remove peaches from the liquid and let them cool down. Reduce the liquid on a low heat to get the rose-water syrup and in meanwhile peel the peaches.
Pour some syrup over the quinoa, place one peach on top in each bowl, pour other syrup over the peaches and sprinkle with crumbled almonds.
Serve until lukewarm, or cold (as you prefer!).










La ricetta in italiano
PESCHE SCHIACCIATE SBOLLENTATE NELL’ACQUA DI ROSE CON QUINOA

Per una persona servirà:

1 pesca schiacciata
1 cucchiaio di zucchero fino
25ml di acqua
25ml di acqua di rose

35gr quinoa
un pizzico di sale
100ml di acqua
1 cucchiaino di olio d’oliva

qualche mandorla sbriciolata

Far bollire la quinoa in acqua leggermente salate per 10 minuti. Scolarla e versarla nelle ciotole. Aggiungere l’olio d’oliva, mescolare insieme e lasciare da parte.
Lavare le pesche. Per eliminare il nocciolo dalla pesca prima bisogna usare il coltello per trovare il nocciolo e poi il cavatorsoli per estrarlo.
Versare in una casseruola l’acqua di rose, lo zucchero e l’acqua e far bollire il liquido per qualche minuto a fuoco basso. Aggiungere le pesche e sbollentarle per circa 5 minuti da un lato, dopodiché girare le pesche e farle sbollentare dall’altro lato per altri 5 minuti. Estrarre le pesche dal liquido e farle raffreddare. Ridurre il liquido per ottenere lo sciroppo e nel frattempo pelare le pesche.
Versare poco sciroppo sulla quinoa, sistemare una pesca in ogni ciotola sopra la quinoa, versare sulle pesche dell’altro sciroppo e cospargere con le mandorle sbriciolate.
Servire tiepido o freddo (come preferite!)

PLJOSNATE BRESKVE POŠIRANE U RUŽINOJ VODICI S KVINOJOM

Za jednu osobu je potrebno:

1 pljosnata breskva
1 žlica sitnog šećera
25ml vode
25ml ružine vodice

35gr kvinoje
prstohvat soli
100ml vode
1 žličica maslinovog ulja

nekoliko smrvljenih badema

Kuhati kvinoju u lagano slanoj vodi oko 10 minuta. Ocijediti i usuti u zdjelice. Dodati maslinovo ulje i promiješati, te ostaviti na stranu.
Oprati breskve. Da bi odstranili koštice najprije upotrijebite nož kako bi našli košticu, a onda nož za uklanjanje sredine jabuke da bi košticu izvadili.
U posudu za kuhanje uliti ružinu vodicu, šećer i vodu i kuhati nekoliko minuta na laganoj vatri. Dodati breskve i poširati ih 5 minuta s jedne strane, onda okrenuti breskve i poširati ih 5 minuta s druge strane. Izvaditi breskve iz tekućine i ostaviti da se ohlade. Nastaviti kuhati tekućinu da bi dobili sirup, a u međuvremenu oguliti breskve.
Preliti malo sirupa po kvinoji, u svaku zdjelicu na kvinoju staviti po jednu breskvu, preliti breskve sirupom i posuti smrvljenim bademima.
Poslužiti mlako ili hladno (kako više volite!)
